Fruit Salsa and Cinnamon Chips

I have many vegan friends who have asked me to post a vegan friendly recipe. So here is a fruity semi-healthy appetizer containing no dairy products that is great for any holiday party.

INGREDIENTS

2 kiwis, peeled and diced 2 Golden Delicious apples - peeled, cored and diced 8 ounces raspberries 1 pound strawberries 2 tablespoons white sugar 1 tablespoon brown sugar 3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas cooking spray 2 cups cinnamon sugar

DIRECTIONS

1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.

2. Preheat oven to 350 degrees F (175 degrees C).

3. Coat one side of each flour tortilla with cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.

Hello out there!

I'm so glad Friday returns to us week after week. Have you ever thought about how awful it would be if it decided to never come back?

Ha.

Anyway, I was looking through my library, and came across a band I used to ADORE sophomore year in high school. They're like super indie, so if you don't have an open mind you may not dig.

Dont Forget Simmons Offers Discounts and Give Aways

After my communications 122 Class with Professor Porter I headed over to the GIrls Night Out Event that Emma was telling the class about. The event started at 5p.m. and is to end at 8p.m. tonight. The setup of the event was super organized, had great music, and the food was great! You can totally tell a lot of time and effort went into the planning of this event. I would say there was 20 or more companies at the event. All of which were giving away free products as they promoted direct selling. Not only did I get some great free things but learned something new. I am not a business/mangement major so there was alot I could benefit from. It is important to keep an ear out about these kind of events. Not only are they educational but you can get some cool gifts as well. Great Job to Emma and the other ladies that worked on the event with her! Something else to remember is that Simmons has regular discounts able to its students. Tip #8 Put on some pants!!!

My eighth tip is that you please dress appropriately for the country you are traveling. In many other countries it is not appropriate to wear short shorts and tank tops. In some this is illegal. When I was 15 I was in Singapore visiting my family. This was the first time I had been to Singapore in nearly ten years so it was the first time I was experiencing it as a young woman. Here is a picture of what I was wearing: Photobucket As my mother and I were walking to the saree shop a man came up behind me and started walking with me and telling me how beautiful I looked and asking me for my number. Scared, I caught up with my mom and grabbed her hand. This didn't stop that guy. Now he was right behind me whispering and asking me for my number. We FINALLY made to the saree shop and he left. When my mother realized what had happened she explained to me that the customs are different in Singapore and that I couldn't dress like I dress in the US. Cream Cheese Cookie Cups

I recently made these cream cheese cookies cups for a bake sale and they sold out in less than 10 minutes. They are also a great desert to bring to a holiday party.

INGREDIENTS 1 (18 ounce) package refrigerated chocolate chip cookie dough 4 ounces cream cheese, softened 2 tablespoons butter, softened 1/2 teaspoon vanilla extract 1 1/4 cups confectioners' sugar

DIRECTIONS 1. Cut cookie dough in half (save one portion for another use). With floured hands, press about 1 tablespoon of dough onto the bottom and up the sides of 12 ungreased miniature muffin cups. Bake at 350 degrees F for 8-10 minutes or until lightly browned. 2. Using the end of a wooden spoon handle, reshape the puffed cookie cups. Cool for 5 minutes before removing from pan to a wire rack to cool completely. 3. In a small mixing bowl, beat the cream cheese, butter and vanilla until blended. Gradually beat in confectioners' sugar. Spoon into cookie cups. Store in the refrigerator.

One Away ..

So I have some exciting news, well just about as exciting as it gets for me right now amidst doing my Finals work: I won for the sixth straight week in my Fantasy League ... and moved into the #2 spot!

For those of you scratching your heads at the moment, remember my rant about my boyfriends lack of attention; because he always checks his Fantasy team? Well I have my own so I have something to check too (and rub in his face when Ray Rice scores me more points than him).

Anyway after spending numerous minutes thinking of my next entry I found myself checking my team projections (again) and succumbed to watching a video I might otherwise not had. A Tyson Any'tizers commercial embedded across the top of my Fantasy screen. Ahh, the next entry ..

Movie Night

This past weekend was a total chill out weekend for me and my two roommates. All three of us vowed after a busy week that we would just hang out, clean, and watch movies all weekend. Today I am writing my blog on this great movie we watched. So on Friday night we all gathered together and made old fashioned popcorn on the stove and rented The Proposal with Sandra Bullock and Ryan Reynolds. The movie was absolutely wonderful! Sometimes it is difficult for the three of us to agree on the movie because all have such a diverse taste in movies. However, The Proposal really had something for all of us. Throughout the course of the one hour and forty minutes, we laughed, cried and screamed at the storyline and plot. I would recommend this movie to everyone even if you don't think this type of movie is your scene, I would still give it a try. If nothing else draws you to watch it, remember that the entire movie was shot in Boston and Gloucester, Mass. And yes the movie isn't supposed ... more »

Lesson #6 This isn’t high school

Okay so yes Simmons is a small college and yes Simmons is an all girls school. But that does not mean you need to have a competitive or snotty attitude. The one thing I have noticed about going to Simmons is sometimes stereotypes exist because they are true. Take the typical private all girls school stereotype, snobby rich girls right? I know when I tell someone I go to Simmons that is instantly thinking either that or she is a lesbian which is a whole other blog entry in itself. What I have noticed from attending Simmons it is very “clicky” and sometimes it honestly feels like high school all over again (minus the best part BOYS). I think people need to open up a little more and try to become friends with people outside of their comfort zone. I definitely understand having a best friend or a group of really close friends because I am with my roommate/best friend almost at all times. But its okay to have other groups of friends too it is nice to ... more »

Diets that Don't Work!

As you know there are a million different diet plans out in the world today. With the exception of a few they don't work.

While it is best to just lose weight the old fashion way by exercising and eating right many people still fall into the habit of these fad diets. Here are the top three diets to avoid:

1. Detox Diets- Diets that literally clear you out. You can do this through pills or liver flushes. Not only will you clear out your system but you'll clear out the room as well. I call this the friends loving you from a distance diet.

2. Fasting or low-calorie diets- Not only are you hungry all the time but your metabolism slows down therefore ultimately gaining weight.

3. Diets that only focus on a certain food item- For example the grapefruit diet, cayenne red pepper diet, raw food diets. At first these diets are effective but then you return to your regular eating habits and gorge yourself on all the foods you have missed out on.

Gossip Girl 3:10 "The Last Days of Disco Stick"

On this weeks episode of Gossip Girl, we were graced with the presence of musical royalty, Miss Lady Gaga. As a huge Lady Gaga fan I was personally ecstatic when I heard that she would be making a guest appearance on the show. Although she did not make her acting debut, her private performance at NYU which was arranged by the character Blair in an attempt to gain acceptance was amazing. She performed her newly released song called “Bad Romance.” Her performance flowed very well with the show and was not just randomly inserted into the plot. In an interview with MTV, Gaga explained that she did not want the performance to be out-of-tune with the storyline of the show, so she sat down with the script-writers and proposed her idea. Ultimately the song “Bad Romance” was made a part of the storyline and easily assimilated into the pre-existing drama of the show.
