Temptation

Hi guys :)

I have a confession.... This weekend I was so weak and hugry because I have run out of things to eat in my "Vegan" diet. So my husband said "Lets go eat sushi tonight." I was happy to go with him but I was contemplating on what I was going to eat... Sushi has been one of my favorite meals before I went Vegan.
So we went to the restaurant and I gave into spicey tuna... This Vegan thing is getting really hard and I just don't know how much longer I can do it. I need will-power! AHHH!
Any ideas? I have eaten at the restaurant The Other Side and found it to be wonderful for my diet. Thanks for that suggestion.

Happy November,

I hope everyone had a wonderful Halloween. Mine was very eventful.

I have to admit that this whole vegan thing is becoming harder and harder.... I have not had sugar in a long time, but I was pressured into it this past weekend with candy and cookies :( ahhh!!!

It's been hard not to eat sugar and I have missed it so much.... it was yummy! My stomach didn't like me too much though.

I have good news though. I was at the grocery store this weekend and found cream cheese and sour cream for vegans. It is milk and lactose free especially for vegans. I was a little scared to try it but I did and it was soo good! I seem to get my sugar craving from the cream cheese. The brand is called Toffuti and I got it at Shaws in the "vegan" section.

It is great to know that these things exist. I'm still looking for other food that replaces my longtime favorites..

Vegan Issues

Hi everyone,

So far I have been blogging about all of my success with being a vegan. Well, this past weekend I ran into a few problems.

My husband and I (yes I am married and I'm too young I know I know I know...) have had many wedding this month along with traveling to several places.

We went to Hilton Head South Carolina this past weekend and I had no luck with my vegan diet. I did take some yogurt and oatmeal with me, but I couldnt live on that for 3 days. I had such a hard time finding food that I could actually eat without ruining all the progress I have made.

Unlike the other wedding we attended in Vermont which offered a vegan meal at the reception, this wedding was a buffet with meat stations and pasta stations. I was okay with the pasta but most of them had cheese in them which I can't have. Not only do I not eat cheese because I am a vegan, but also because I am lactose intolerant and my stomach cannot handle it.

Yummy Vegan Foods!

HI Everyone!!!

Since my last blog, I have had a fun time finding new recipes for my vegan diet. I went to Wholefoods and found some "ground beef" and organic tomato sauce to make spaghetti. I have made it two days in a row now and it is fantastic! :) It actually tastes better than regular spaghetti.

Here's the recipe:

1. 1/2 cup of whole wheat organic pasta (maccaroni shape) boiled with 1 cup of water for 6 minutes

2. Saute 1/3 cup of "ground beef" with 1/4 cup organic tomato sauce for 6 minutes

3. Combine the two and enjoy!

I also found smart bacon, tofu scramble, vegan waffles, "ham" and many more yummy foods. I also think vegan cheese is not bad at all! I actually really like it!

If you look hard enough, you can find substitutes for a vegan diet that replaces milk and meat products.

New Trend at Weddings

Hi all!

I attended a wedding this weekend in Stowe, Vermont and it was absolutely beautiful!

They had a huge reception with a 3 course meal with 3 choices: steak, salmon, and a vegan option.

Right before the reception began, I wondered what I was going to eat because I am a vegan (as you all know)and to my surprise, they had a vegetarian option for me!
It was spinach pasta with vegies on top. It was yummy.

I was surprised to see that they offered a vegetarian option. Most weddings only have 2 options for the guests to choose from.

I guess these days being vegan is more popular and accepted. I am looking forward to other weddings that hopefully have the "vegan" option :)

What a cool new trend!

Taste Buds

When I first found out I was lactose intolerant, I had to go buy soy milk. I have to tell you the taste is significantly different from real milk. I was devastated to think that cereal will never taste the same again, I would never be able eat regular yogurt again, what about ICE CREAM!!!

Then I thought to myself: What makes more sense, being doubled over in pain or sick to my stomach every time I eat or drink something with milk in it? Or modify my diet and eat the things I love with a little different taste?

I decided to modify my diet and train my taste buds to like what I gave them. It has been an adjustment.

Since I have changed my "milk" products to soy milk products, I have also become a vegan. I don't know what came over me but something did. Many of my friends think I am nuts, but I feel so much better and have more energy than I ever have. I sleep better and am more alert in class. Being the animal lover that I am, I feel better about myself...

Milk or Soy Milk?

Hello Everyone!

My name is Molly Simmons and I am a senior at Simmons College. This is my last semester of college and it's hard to believe that four years has gone go by.

I was diagnosed with being lactose intolerant over summer break and it has changed my life. That may sound silly because a high percentage of Americans are the same way. I have had to rethink my eating habits's and change a lot of what I normally eat. I have found that changing my diet has made be feel better and gives me more energy.

This blog will focus on those choices and little tips that can help others out there who are struggling with the same problem.
